Grana Padano Crisps

                                                                         

A delightfully simple and alternative nibble that you will  make time and time again. 250g Grana Padano cheese

 

Preheat the oven to 220ºC. Line two baking trays with baking  paper. Finely grate the Grana Padano without wasting the rind.

                                                                         

Sprinkle a teaspoon of cheese into a 3cm-4cm cutter on the baking paper spreading the cheese to edge of the cutter.

 

Repeat to fill the tray with rounds of grated cheese. Scatter a few thyme leaves over each round. Bake in batches for about 3 minutes or until melted but not firm. Using a spatula or cheese parer turn the rounds over and cook for a minute more until light golden. Remove each round from the tray and cool.

 

Makes 30.

 

Grana Padano Puff Twists

 

4 sheets of ready rolled pastry

50g melted butter

165g grated Grana Padano

1 egg lightly beaten

 

Preheat your oven to 200ºC. Lightly brush the pastry with the butter, then sprinkle each sheet with 25g of the cheese and season with salt and pepper. Fold each sheet in half bringing the top edge down towards you. Brush the tops of each sheet with the egg. Sprinkle with 2 tablespoons of extra grated Grana Padano and season with salt. Using a very sharp knife cut the dough vertically into 1cm strips. Transfer each strip to a baking tray lined with baking paper. Hold each end of the pastry and stretch and twist in opposite directions to make a plait. Bake in the oven for 10 minutes until golden.
